Delicious vegan lightly spiced root vegetable & lentil soup - perfect for a cold winter's day!

This warming lightly spice winter root vegetable & lentil soup will keep away those winter chills!

Easy, quick and cheap to make but nutritious and delicious using seasonal ingredients....Yum!

Serves 4

2 carrots chopped

2 parsnips chopped

1 sweet potato chopped

1 onion chopped

1 garlic clove chopped

1/2 cup small red lentils

1 litre vegan bouillon veg stock

1 teaspoon curry powder

1/2 teaspoon cumin seeds

1/4 teaspoon chilli optional

2 tablespoons oil (rapeseed, olive or coconut)

Coconut yoghurt optional

Shallow fry the onion, garlic, cumin seeds and chilli for 5-10 minutes in a little rapeseed, olive oil or coconut oil. Add the other vegetables and stir for a minute before adding the curry powder stock and lentils. Bring to the boil and simmer until the vegetables and lentils are cooked. Wizz up with a hand held blender and swirl in some coconut yoghurt...enjoy!
